
I grew up eating homemade enchiladas. I mean authentic Mexican enchiladas. My mom made her own sauce. When I got married I craved my mom's homemade enchiladas. I would cheat and buy the canned enchilada sauce, but was always disappointed it didn't taste like mom's. I finally asked my mom for the recipe but was frustrated after she told me it was a little of this and a bit of that. That's how all of her recipes are...ugh! That didn't cut it for me, I needed measurements so I was on the search for her recipe and found this one years ago and it has been on our favorites list ever since. It's almost as good as the real thing! :)
Enchilada Sauce....just like mom's.
1/4 cup flour
1/4 cup shortening or oil
2 Tbsp chili powder
1/2 tsp oregano
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp salt
2 cups water
1 can tomato sauce
3 beef bouillon cubes
Brown flour in oil/shortening. Add spices, water, tomato sauce and bouillon. Stir constantly to mix well. Cook until thickened.

What size can of tomatoes?
What is the serving size? I want to make a whole tray would I need more tomato sauce?
